Mashed Sweet Potatoes

Serves 8 to 10

Roasted whole first so the sugars concentrate, then mashed with butter and a little brown sugar. Sweet enough to earn its place on the table, not so sweet it reads as dessert.

Reheating. 350°F covered for 30 minutes.
